If you’re a fan of Will Ferrell or Wedding Crashers, you get it. LOL! If you’re not then just keep scrolling for a yummy meatloaf sandwich recipe from MY MOM that is perfect for lunch! Like most moms, we are always looking for easy meals that work for the whole family and make great leftovers. My mom hit the spot with her signature meatloaf between two pieces of toast; simple. Check it out!

To make the meatloaf you’ll need:- 1 lb of hamburger
- 1 can diced tomatoes
- 1 egg
- 1 small can French fried onions
- a little tomato paste for texture and moisture
- Italian seasoned bread crumbs enough to make a firm shape
Gather your ingredients and mix them all together thoroughly. Form the mix into a loaf shape and put in a glass baking dish. Cook at 350 degrees for about 40 to 50 minutes. Check to make sure it is cooked all the way through. Drain grease afterward. Enjoy with classic sides such as potatoes and mixed veggies; OR… Make It a Sandwich.
- Cut a thick slice of the loaf. Heat up if leftover.
- Add a thin slice of cheese to hot or warmed meatloaf. We do Provolone.
- Toast two pieces of bread. We prefer white.
- Spread mayo on the insides of the toast.
- Add the meatloaf between the bread.
- Cut in half for childhood nostalgia purposes.
- Eat my moms meatloaf sandwich!

I Iove meatloaf! It was definitely my mom’s go-to when I was younger!
This is definitely a recipe I have to try! I’m not a huge meatloaf person, but It’s growing on me!
Believe it or not I’ve never had meatloaf….it sounds similar to a meatball but bigger? I’ll have to give this a try because I have a feeling my kids will like it!
